Hello fellow lovers of nourishing, delicious food!
This is the tale of how a body and mind deimated by gluten and a general SAD (Standard American Diet) way of eating began to heal through food.
Food...where do I begin? For years I had a very hands off approach to what I injested. I rarely cooked and when I did, I took no pride and very little pleasure from the act of taking ingredients and mixing them together to create something edible, let alone enjoyable.
It was until my body began to shut down (I'll save those gory details for a later post) and the numerous doctors that I saw were baffled that I began to access what I put in my mouth and how it might be affecting me.
Three years later, I am still going down the path to wellness. I thought, uninformed gal that I was, that by simply giving up gluten I would revert back to health. Au contraire! I have learned so much about the intricacies of body and mind and how delicate, yet resilient we are.
Healing starts in the gut, and oh, the fun I have had healing my belly! I've come to adore the way the skin of an eggplant gleams, the scent of lemon balm crushed in my palm, and the satisfaction that a pot of homemade chicken stock simmering on my stove gives me. Going gluten free has domesticized me in ways my previous self would be amazed by. And am I ever thankful for the blessings and knowledge my autoimmune disease has brought me. Celiacs has opened my world (and my kitchen) to so many numerous joys and delicious, healing meals.
